Ingredients for single person:
• White/Brown rice – as per your diet. Here the leftover rice from the day before works best.
• Chicken breasts – dice the chicken into very small pieces about 1/2-inch, it makes it the perfect size for this fried rice.
• Refined/mustard oil – as per your choice. U can also choose olive and sesame oil.
• peas and carrots blend – take few peas as per your requirement and get carrot peas into small pieces
• Green onions – feel free to add more green onions to taste.
• Garlic and ginger – crush and use fresh here for best flavor.
• dark soy sauce – 2 table spoon
• lemon,pepper and salt- as per your requirement
How to cook chicken fried rice:
- In a large non-stick wok or pan, heat 1 1/2 tsp refined/mustard oil.
- Add chicken pieces, season lightly with salt and pepper and sauté until cooked through, about 5 – 6 minutes. then transfer chicken to a plate.
- Now, Return skillet to medium-high heat, add remaining 1 1/2 tsp refined/mustard oil
- Add peas and carrots blend and green onions and sauté 1 minute, then add garlic and sauté 1 minute longer.
- There after add rice and chicken pieces into the veggie
- Add dark soya sauce,Salt and 1 tbs lemon juice and season with pepper to taste.
Note: it taste better when served hot !
